Guilt-free peanut butter balls

What better way to celebrate National Peanut Butter Lovers Day than with a delicious, healthy and ridiculously easy Peanut Butter treat?! Plus, it’s vegan and dorm-room friendly—no oven required!

Ingredients:

    1. 1 1/3 cup almond flour (can sub 1 cup oat flour)
    2. 1 cup peanut butter
    3. 3 tablespoons maple syrup (or more if you prefer it sweeter)
    4. 2 tsp vanilla
    5. 1/2 cup chocolate chips (1 cup if you prefer them extra chocolatey)
    6. 1 tsp coconut oil
    7. Optional: Sea salt

Instructions:

    1. In a bowl, mix together almond (or oat) flour, peanut butter, maple syrup and vanilla. Stir until creamy smooth.
    2. Roll into small, 1-inch balls and refrigerate for 20 minutes.
    3. In a small bowl, heat chocolate chips and coconut oil in the microwave for 30-second increments, stirring in between, until melted.
    4. Dip half of the PB balls into the melted chocolate and set on plate or tray. Before chocolate cools, sprinkle with sea salt. Repeat until all the balls are dipped.
    5. Place balls in fridge for 15 minutes before eating.
    6. Store in fridge.
