What better way to celebrate National Peanut Butter Lovers Day than with a delicious, healthy and ridiculously easy Peanut Butter treat?! Plus, it’s vegan and dorm-room friendly—no oven required!
Ingredients:
- 1 1/3 cup almond flour (can sub 1 cup oat flour)
- 1 cup peanut butter
- 3 tablespoons maple syrup (or more if you prefer it sweeter)
- 2 tsp vanilla
- 1/2 cup chocolate chips (1 cup if you prefer them extra chocolatey)
- 1 tsp coconut oil
- Optional: Sea salt
Instructions:
- In a bowl, mix together almond (or oat) flour, peanut butter, maple syrup and vanilla. Stir until creamy smooth.
- Roll into small, 1-inch balls and refrigerate for 20 minutes.
- In a small bowl, heat chocolate chips and coconut oil in the microwave for 30-second increments, stirring in between, until melted.
- Dip half of the PB balls into the melted chocolate and set on plate or tray. Before chocolate cools, sprinkle with sea salt. Repeat until all the balls are dipped.
- Place balls in fridge for 15 minutes before eating.
- Store in fridge.
