Taste fall with this pumpkin spice mugcake

To celebrate Pumpkin Spice Day on Oct. 1, make this delicious mug cake. All you need is 5 minutes, 10 ingredients, your favorite coffee cup and a microwave. No over required! It’s not only full of ooey gooey pumpkin spice goodness, but it’s the perfect singular serving, easy to make vegan and not overly sweet.

Ingredients to make pumpkin pie spice mug cake

Ingredients:

  • 4tablespoons all-purpose flour
  • ½teaspoon baking powder
  • 1tablespoon sugar of choice (brown, white or coconut)
  • 1teaspoon pumpkin spice mix
  • Pinch ofsalt
  • 3tablespoons pumpkin puree
  • ½tablespoon maple syrup, or more if you prefer it sweeter
  • 2teaspoons oil, (canola, coconut or avocado)
  • 2tablespoons milk of choice
  • 1teaspoon pure vanilla extract

Optional toppings:

  • Whipped cream or scoop of vanilla ice cream
  • Chopped walnuts or pecans
  • Chocolate crips or chocolate drizzle
  • Dusting of cinnamon or pumpkin pie spice

Instructions:

  1. Add all of your dry ingredients—flour, baking soda, sugar, pumpkin pie spice and a pinch of salt—to the mug.
  2. Stir to combine.
  3. Next, add all of your wet ingredients—pumpkin puree, maple syrup, oil, milk of choice and vanilla—to the mug.
  4. Stir until you’ve reached a smooth consistency.
  5. Pop it in the microwave for 90 seconds.
  6. Let cool, add your favorite toppings and enjoy!
